Kiwi Mojito

Ingredients
5 kiwis, peeled (divided)
1/4 cup water
4 tsp sugar
8 mint leaves, plus more for serving
ice, for serving
3 oz rum
2 oz fresh lime juice
sparkling water, for serving
1 lime, sliced (for serving)
Directions
- In a blender, add 4 of the kiwis and the water. Blend to puree. Strain through a fine-mesh sieve into a measuring cup. Discard the pulp and seeds. Set the juice aside. (This should yield 1/2 cup of juice.)
- In each of two tall glasses, add 2 teaspoons of sugar and 4 mint leaves. Muddle the mint and sugar to break up the leaves. Add ice to the glasses.
- Divide the rum, lime juice and kiwi juice between the two glasses. Top with sparkling water, and stir to combine.
- Slice the remaining kiwi. Garnish the glasses with kiwi slices, additional mint leaves and lime slices.
